It really has been a while since I've baked a lemon cake, let alone tried a new recipe. After seeing someone talk about Mary Berry on Instagram, I knew I had to taste her Lemon Drizzle Cake. Mary Berry (Mary Hunnings) is a well-known English baker and television host. She is the Martha Stewart of the U.K. and people are obsessed with her!
This Lemon Drizzle Cake is so simple to make and absolutely scrumptious to eat; very tender and flavourful. There are only a few basic ingredients and it bakes up surprisingly quickly for such a large bundt cake. I had everything on hand (I love when that happens!) and I popped it in the oven while we ate dinner and it was ready soon after we were done (we ate it slightly warm). There is a unique crunchy lemon sugar glaze on top and everyone loved it! The cake is so moist and lemony, it was really difficult to stop from devouring the entire thing.
One step which was new to me was creating lemon sugar before adding the butter. The granulated sugar is added to a food processor along with the lemon peel of one large lemon. The peel is finely chopped into the sugar, which becomes so moist and fragrant. I really enjoyed this part and think it adds an extra layer of lemony-ness!
