I follow the Tim Tracker on YouTube and in one of his recent videos he made Peanut Butter Blossom cookies. They are those crinkly PB treats with a Hershey's Kiss pressed in the centre. I love my usual peanut butter cookie recipe but I've often seen this Kiss version and have always wanted to try it.
As part of my COVID baking cravings, I suddenly decided last night was the night. Ill-prepared, my son donated his last 15 Kisses leftover from Valentine's Day. I also had some extra white baking buttons from the Churro Toffee experiment and I figured they couldn't be bad in the remaining cookies.
The recipe from Betty Crocker (found HERE) was the one I picked to try and I am very pleased with how the cookies turned out. The recipe is super simple and doesn't make a gigantic batch, which I appreciate. I followed it exactly and while The Tim Tracker opted to bake some of the cookies with the Kisses already pressed in, I waited until the cookies were fresh out of the oven, as per the directions.
The cookies are soft and tender and the Kiss melts to a lovely soft chocolate burst, without losing its shape. The peanut butter flavour is much milder than a traditional fork-pressed plain version but my son actually preferred them that way. He also liked the white chocolate buttons better than the Kisses!! For me, the Hershey's always wins!
I highly recommend you give these easy cookies a try if you are like me and maybe 15 other humans who haven't tasted them yet. They are so fast to make, yield just the right amount so you don't feel too guilty, and they are incredibly scrumptious! I am printing and laminating the Betty Crocker recipe as soon as I am done typing this word........
