I made a spiral ham for Easter dinner and looked for a good soup recipe to use up the leftover meat. Taste of Home was a great magazine I used to subscribe to back in the 90s and I always loved the amazing, easy to make, home-style dishes. I found this Cheddar Ham Soup recipe on their website and gave it a try, even though I knew it was going to be rich and heavier than what I usually make.
The ingredient list was pretty standard and I had everything I needed. It was so easy to make, basically just boiling the vegetables while making a quick cheddar white sauce. Next, simply combining the two and adding frozen peas and the leftover ham.
The result was incredible! My family loved it and hearty it was! Definitely could use this soup as a meal with salad and a good hunk of crusty bread; it is very similar to a great pot pie filling. The batch didn't last long and we were sad when it was all gone. This is one of those keeper recipes I know I'll be making every time we have leftover spiral ham! I highly recommend it!
