My dear friend made this amazing "copycat recipe" for Disney Churro Toffee and I just had try it myself. She said it was so easy to make and actually churned out several batches for holiday treats. Armed with the recipe I headed to the store for white chocolate melting wafers and a proper candy thermometer. That cost me about $32. I used a pound of butter and two cups of sugar as well.
Things were going along perfectly. It is not complicated to make toffee: melt butter and sugar and boil until desired temperature, in this case 285 degrees F. My new thermometer was getting close to the 280 degrees and the toffee was getting pretty dark. My instincts said to remove the pan but the directions said 285 was the magic number. Well, there was my mistake. When I poured the toffee onto the cookie sheet the bottom of the pan was burnt black!
The rest of the process was fine in terms of melting the wafers and coating the pieces of toffee with chocolate and cinnamon sugar. I hoped it didn't taste burnt as it seemed only the pan was impacted. Indeed, when the candy was cool enough to taste, the toffee was definitely overdone. Not quite ruined or 100% burnt flavour, but I think if I'd taken it off the burner just a minute or two earlier, it would be so much better. The ingredients were too dear to throw away and the Churro Toffee was still edible for sure! I have eaten so much of it and it got even better over the next few days. I'm not sure if I will make this again and my pan was almost a right-off. I've tried scrubbing, soaking, boiling, a razor blade, and baking soda and vinegar. Nothing seems to work to remove that burnt on sugar.
I am so susceptible to suggestion and when I see an amazing recipe I have to give it a try. Sometimes it works and sometimes it isn't quite successful. This Churro Toffee falls somewhere in between. I might try again, lesson learned, but not for a while. The recipe yields quite a lot and there's only so much toffee I can eat at one time! I'm not sure if the 'churro' flavour really came through but it is delicious none-the-less. I'm stubborn too, and dislike not having a perfect result when I try something new. I usually keep going, at least until I get it right!
