I finally found Kodiak Cakes Pancake & Waffle mix at Costco. This has been a favourite of Weight Watcher members for a long time but was difficult to find in Canada. While western provinces seemed to get it fairly early on, here in Ontario we had to wait until recently to stock up on the high protein baking mix.
My daughter gave me one bag from her box and I made the pancakes first. They certainly did fill me up for a lower amount of WW 'points' but the flavour was not as good as I was anticipating. My homemade pancakes (especially the buttermilk ones!) are soooo yummy and it's a high standard for a boxed mix to meet. Still, on my own visit to Costco I did purchase a full box of Kodiak Cakes. I knew there were many recipes online to try and since all that protein does keep you full, (and as a vegetarian I'm always looking for alternate protein sources), I wanted to give it a second chance.
I started with some simple muffins. I love being able to quickly grab a healthy, homemade muffin to pack in lunch or have with tea in the afternoon slump time. I find I can satiate that 'home baking' craving well with a soft, tender muffin without going too overboard with calories. I usually make a bran or banana muffin, using only 1/4 vegetable oil and not much sugar - I don't like them too sweet or cake-y. I adapted the Kodiak recipe by using skim milk and vegetable oil instead of butter. Further, I replaced the (too) large amount of brown sugar with 1/4 cup stevia and one tablespoon of raw coconut sugar. That was plenty sweet for me and since there is quite a bit of spice added to the batter, the flavour is terrific. I also added a cup of frozen blueberries for added nutrition and flavour. Don't be afraid to make recipes work for you!
The muffins were excellent and truly satisfying. I probably won't be making any more pancakes with the mix but have already whipped up another batch of muffins! This time I used leftover pumpkin puree in place of the applesauce with excellent results. I wanted to keep the points low but you could certainly throw in some raisins or cranberries as well.
