She offered a tasty, chocolatey substitute with this simple recipe for a chocolate cake ready in under a minute. It is so simple to make, just 3 ingredients (chocolate cake mix, water, and semi-sweet chocolate chips) stirred in a microwave safe mug or ramekin dish. 50 seconds of zapping later the single serving of cake is ready.
I like to eat it warm with a spoonful of vanilla ice cream to mimic a full blown lava cake experience. The whole family is enjoying these especially since they can be made in the spur of the moment when a yearning for chocolate cake hits. The Chocolate Mug Cakes still clock in at about 7 Weight Watcher points (without ice cream) but it's much better than the 26+ for a slice of frosted cake.
I have stored the remainder of the Devil's Food mix in a mason jar with the recipe for this easy dessert taped to the front so the kids can make it when they want. This is a great treat in my book and is very satisfying with the melty, gooey chocolate chips and the cold, creamy ice cream.
