Apparently this could be the perfect meal. According to the Blue Zones Solution, you could theoretically eat this one plate of food for the rest of your life and be perfectly healthy. It consists of cooked beans, rice, roasted squash, and an avocado. I added the corn tortilla and a stuffed tomato for my dinner but those are a bonus.
The food is delicious and nutritious and I was very happy eating it. I don't know if I'd want to only eat that for the remainder of my days but I certainly could if I had to. We are still going strong with the 'live to 100+' lifestyle and are enjoying it. I use the InstantPot to pressure cook up a batch of beans, a lot of brown rice, and boiled eggs to last the week, with steel-cut oats almost daily for breakfast. I order 2 loaves of traditional sourdough a week from the baker and enjoy a glass of Cannonau wine a few nights. We love soup for lunch or beans and rice, adding plenty of fruit to keep us full and satisfy that sweet tooth.
