One of my very earliest YouTube video recipes (from 7 years ago now!) was for homemade macaroni and cheese. I've always made it from scratch and after adding a buttered breadcrumb topping, baked it in the oven. Our kids love it and still request it whenever they're home.
Of course, I still had to try making mac & cheese in the instant pot. While it's a totally different version of the cheesy pasta dish, I was very pleased with the results! Everything is made in the one pot with simple ingredients. It takes no time at all and I will certainly be adding this recipe to my meal rotation once in a while.
The recipe is from Pressure Cooker Recipes. The macaroni is cooked in the pot and then butter, eggs, cheese, and evaporated milk (of all things!) are stirred in. One 'secret' ingredient I loved was a splash of Srircha, which added a little tang and a lovely flavour. This is the perfect dinner for a rushed night and a bare fridge. Using evaporated milk means you can have a pantry-friendly dish ready in no time.
The mac & cheese is so creamy and comforting. I served it right out of the pot although you could spoon it into a casserole dish and add the breadcrumb topping before a quick bake or broil.
