I thought the Creme Brûlée made in the pressure cooker was amazing but cheesecake might be even more incredible! I used this recipe from Pressure Cook Recipes since they had done all the testing for me (in fact, it took them 17 versions to come up with a winner!). I followed their directions (the ones for the non-perfectionist) and the cake was perfect!
I did have to purchase a small springform pan that would fit in my Instant Pot insert but I found the exact size I needed at the discount store for about $5. Now that I've tried the recipe I know I will be using it often! We ended up trying the cake the first night and while it was delicious, when we had a slice the next day, after a thorough chilling, it was spectacular.
I served the cheesecake with a quick, fresh raspberry puree sauce rather than my usual cherry pie filling topping or more elaborate strawberry glaze. Any of those options would only gild the lily of this decadent dessert made even faster and easier in the Instant Pot pressure cooker. So amazing!
