This recipe is from 1990 (!!!) but it still works for a great and simple meal today, 25 years later. It sounds fancy but is basically mac & cheese with slices of Italian sausage, a bit of fresh parsley, and a dab of tomato paste. Don't ever think a recipe sounds too complicated before reading it through and thinking about what needs to be done. Often, a long list of ingredients might just require a bunch of different herbs or spices, or combine to make a basic thing, like cheese sauce. For example, our favourite Chicken Cacciatore seems like a bit of a chore to make when you look at the original recipe, but broken down into sub-sections you will realize it's just browned chicken covered in a basic tomato sauce and served over pasta.
I made up this pasta dish when I was in a pinch for dinner. I just happened to have Italian sausages in the freezer and we always have dried penne in the cupboard. The whole family ate it right up and enjoyed every bite. You can get the easy recipe from my go-to Milk Calendar, HERE. Enjoy!
