Is it a dessert? Is it a side dish? I couldn't resist making Al Roker's mother's Sweet Potato Poon, a sweet and spicy casserole topped with toasted marshmallows. You can get the recipe HERE. It's kind of like a sweet potato pie without the crust and it's very easy to make. We don't have the traditional marshmallow-topped side dish at our house (I'm not even sure if Canadians generally do) but every year I always have to try a variation of it.
I really liked the dish, which is simply the mashed sweet potatoes mixed with sugar, flour, baking powder, and spices. The only unusual ingredient is crushed pineapple. Once the 'pie' has baked for half an hour it is garnished with the marshmallows and toasted under the broiler. They taste just like they do around the campfire and are probably my favourite part of the whole thing. The sweet potato base was flavourful too - it was just a little too sweet and a tad bit pasty for my liking. I served it along with dinner (stuffing, brussels sprouts, and roast chicken - only because it wasn't turkey day here) but I think I would prefer it as an actual dessert rather than a side. Still, as good as it was, given the choice I'd pick that amazing Sweet Potato Souffle I shared a few weeks back.
