We dropped in at daughter's and when I went to throw something out I was horrified to see an old banana in the garbage...a) because we compost at home, and b) because there are so many amazing recipes to make with ripe bananas! When I got home I had to whip up a Chocolate Chip Banana Bread loaf and text her a photo with the caption "Why you never throw away a banana". It was delish!
Chocolate Chip Banana Bread
1/2 cup butter, softened
1 cup sugar
2 eggs
1 cup mashed banana
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup chopped walnuts (optional)
3/4 cup semi-sweet chocolate chips
Cream butter and sugar together. Add eggs one at a time, beating until smooth. Blend in mashed bananas.
Combine dry ingredients and add to banana mixture only until incorporated. Bake in greased 9x5” loaf pan at 350 degrees F for about an hour. Cool.
