I've posted several times about making strawberry freezer jam. It's that time of year when local strawberries are available and they are never around long enough! Hubby brought home a flat of fresh berries and that means there is no time to waste getting the jam made.
I always use the Certo recipe: 1-3/4 cups crushed berries (with juice), 4 cups sugar, 1 Certo packet of liquid pectin, and lemon juice. I usually do three batches at once to save time, allowing the berry/sugar mix to sit for ten minutes before proceeding with each batch individually. It is still a couple hours work by the time you wash all the jars and containers, wash and hull the berries, and get the jam made and dispensed.
Still, there's nothing like the taste of fresh strawberry jam, especially during the cold, grey winter months. We've already eaten almost one jar so I'm glad I ended up with four batches from the flat of berries I began with.
