At DH's work Christmas party, the caterer served pretzel rolls. They were soooo good and that was the first time I'd had them. I went on a quest to buy some but no store I visited had any.
Then I happened to see the new Robin Hood recipe booklet (scroll to the bottom of the page to get the free download) and lo and behold, there was a recipe for pretzel rolls!
These are probably not something you'll make at the spur of the moment on a weekday because there are a few steps involved and of course, quite a bit of rising time.
The pretzel rolls are not difficult to make - it's just a yeast bread dough shaped into rolls, but there is the added step of boiling the raw, risen buns in a pot of sugar and baking soda boiling water. The boiled buns are brushed with egg white and sprinkled with coarse salt before baking.
I wasn't sure how my rolls were going to turn out as I've tried to make actual pretzels before and they were a bit too chewy. I was hoping I didn't have a batch of 16 hockey pucks! They smelled wonderful while they baked and I'm happy to report they turned out beautifully! They are slightly chewy on the outside and soft on the inside. There is a lovely sweet, salty crust and they do taste just like a pretzel! They were definitely worth the effort to make and until I can find them in a bakery somewhere I guess I'll just have to keep making my own pretzel rolls!
