Here is the first dish I made from the recipe booklet that came with my new Cuisinart food processor.
I just happened to have a butternut squash on my counter and I love leeks, so Butternut Squash Soup with Leeks was the perfect starter recipe. Two garlic cloves are chopped in the processor, along with the leeks. While they are sweating in some olive oil, the squash is sliced using the slicing disc. That gets added to the pot for another 5 minutes of gentle heating.
A really nice addition to the soup is a 1/2 cup of white wine. Not only does it smell amazing while it simmers, but it adds so much flavour to the soup. Once the chicken broth, seasoning (salt & pepper, a pinch of freshly ground nutmeg) and a teensy bit of lemon juice are added, the soup simmers for about 20 minutes until the squash is softened.
As a final step, the solids are whirred in the processor to produce a smooth puree. After stirring the mixture back into the soup pot with the broth, a 1/2 cup of whipping cream can be added to the soup for added richness and flavour (yeah, I added it!).
I must say that this recipe was simple and so delicious! My house smelled absolutely amazing and the flavour of the soup was fantastic! My usual butternut squash soup recipes either have apple added, which is quite sweet, or curry, which is spicy. This one is a nice balance and is going to be my new favourite. The food processor certainly makes the chopping go faster and yields a very smooth and even consistency to the pureed solids. Sometimes it seems like it's MORE work to prepare everything to be sliced and chopped in the machine but if there are several different jobs it can do (slice, chop, puree) it's worth getting it dirty!
