The meat part of dinner has always been the least interesting to me and I have had cycles of vegetarian living throughout my life. I guess I'm back in the meatless stage as I have decided to go veggie once again.
It is the perfect time of year to indulge in so many lovely fruits and vegetables and it's much easier to flavour great salads and stews with fresh herbs picked right from the garden. One of my favourite things to make are brightly coloured and vibrantly flavoured salads featuring both vegetables and legumes.
For instance, this chick pea salad combines the garbanzo beans with fesh basil and sweet red pepper. Cucumber, red onion, and a dressing of olive oil and lemon juice (and minced garlic) round out the flavours and make it taste even better on day 2!
I have a stack of awesome vegetarian cookbooks from which to select a zillion great summer recipes. My DD is on-board with me so that makes choosing a vegetarian/vegan diet as much as possible so much easier and more fun. Even if it's not a 100% change, a few meatless days for the rest of the family will do them good. My goal is to lose some weight and feel even better about what I'm eating. I'll share some of the new ideas for meals over the summer. Eating this way takes me more time - there are more frequent trips to the grocery store and more time chopping and preparing ingredients. Unfortunately, that means less time for quilting and crafting! Since I'm trying to get outside exercising as well, it makes it even more difficult to get time in the workshop. I guess I'll be satisfying my creative yearns in the kitchen!
