It's kind of the wrong time of year to be talking about parsnips (usually something we enjoy in the winter months) but they have been particularly sweet and nice in my grocery store so I've made them a couple of times in the past few weeks.
While I usually just boil them like carrots or throw them in the roasting pan with a chicken, on this occasion I broke out my Delia Smith Christmas cookbook and tried something different. In her Parmesan-baked Parsnips recipe the parsnips are par-boiled and then coated in a flour/parmesan coating and roasted in a hot oven. The result is a golden, slightly crunchy parsnip with an incredible flavour hit from the parmesan (and oil & butter in the pan!).
