My daughter was craving oatmeal raisin cookies and this recipe came to mind. I love the soft, chewy texture and hint of molasses flavour. They are super easy cookies to make - no chilling the dough or fussy cutting...I use an ice cream scoop to portion out the dough - makes it go really fast!
1/2 cup butter
1 cup sugar
2 eggs
1/3 cup molasses
1-3/4 cup flour
1 tsp baking soda
1/2 tsp salt
1-1/2 tsp cinnamon
1 cup raisins
1/2 cup chopped nuts
2 cups rolled oats
- cream butter and sugar. beat in eggs, add molasses. add remaining
ingredients. mix well. drop onto greased cookie sheet. 350 degree F, 8-10
mins.
