You can't beat macaroni for a tasty and economical mid-week meal. This recipe for homemade mac 'n beef dinner is very simple and really good! It's got a slightly different taste than the other similar dishes I've shared - very old-fashioned and hearty! Everyone loved this traditional macaroni supper. It made a nice change from regular mac & cheese and I didn't have to heat up the oven.
To make the basic meat sauce, start by cooking a cup each of chopped onions, green pepper, and celery in 2 Tbsp of oil for about 5 minutes. Then add a pound of ground beef and brown until no longer pink. After draining the fat, add 28 oz. of canned tomato sauce and 1/2 tsp of salt and 1/4 tsp pepper. Once that's simmered for 20 minutes, add 1 pound of macaroni that has been cooked according to directions. (I boil mine for about 8 minutes). Drain and toss with some butter and grated parmesan and top with the meat sauce. Mmmmm!
