Just a hint that if you need to cut boneless chicken breasts into chunks or dice for a recipe, do so when it's partially frozen. If it's already frozen, don't thaw it completely before cutting it up or if it's still fresh from the store, put it in the freezer until it's almost frozen. The chicken is SO much easier to cut when it's firm, there's no problem cutting it into strips (and then into diced pieces if required), any size needed. The meat doesn't get all wiggly and slimy under your knife and you have a lot more control.
