I love corn chips (I think that started in childhood! lol!) so when I saw that this recipe for a 1-Dish Taco Bake had a topping of crushed corn chips I thought I had to try it!
Our family loves Mexican food and we usually just have tacos or fajitas but this casserole was a nice change and combined all the same flavours in one dish. It's very fast to assemble and it makes a great weekday dinner. To avoid having a whole bag of Fritos in the house (bad news for me!) I just picked up the one cup needed for the recipe from the bulk store!
