It was fortunate that DH enjoyed this Honey Cake so much since he pretty much had to eat the whole thing himself. He had a piece with coffee after breakfast, a slice after lunch, and another for dessert in the evening. I liked it too but am trying not to eat too many treats so just one slice for me! The kids didn't care for the coffee icing I put on top so they were no help in reducing this very large tube cake.
I have made honey cakes before but never used a recipe like this one that has instant coffee as one of the ingredients. The pairing of coffee and orange was what interested me in the first place and the cake has a really nice flavour and texture. The recipe says to 'frost as desired' so I prepared a batch of my usual vanilla butter frosting (you can find the recipe at the end of my Banana Cake video shown below) and simply added a teaspoon of instant coffee dissolved in a teaspoon of warm water to make a coffee frosting. Next time I make the cake I'll probably just make an orange glaze instead - that way the kids can help eat it up! Here's the recipe for the cake if you'd like to make your Honey a Honey Cake!
