I don't bake things with nuts very often (since DH is allergic) but I really enjoy the flavour combination of almond and cherry, and this quick bread has both. By adding the actual 'juice' from the maraschino cherries, the loaf is a pretty pink colour...and it tastes as good as it looks. Enjoy!
Maraschino Cherry Loaf
1/4 cup butter
1 cup sugar
1 egg
2/3 cup milk
1/3 cup maraschino cherry juice
1 tsp almond extract
2-1/4 cups all purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 cup chopped walnuts
2/3 cup chopped maraschino cherries.
350 degrees F, greased 9x5 loaf pan, 1 hour
