
I don't know if people make French toast very often any more - even I tend to overlook it when I think of making a cooked breakfast. But when I
do remember to whip up a batch we are never disappointed with the golden, buttery results. It is very simple to prepare: I beat up 4 eggs (to make 8 slices) in a square baking dish and add only a touch of milk (as with scrambled eggs, you don't want to dilute the flavour of the eggs). I always add cinnamon, nutmeg, and a tiny pinch of cloves to the batter. Then I dip the bread (usually whole wheat) quickly in the mixture - I don't like the bread to be soggy. I grease my griddle with butter and give them a good few minutes per side so the slices get nice and golden. While they are cooking, I add a dab of butter around each slice so it melts into the bread - that helps with the both the flavour and colour. I serve them with peaches and pure maple syrup. Soooo yummy! You can wrap and freeze any leftovers too.
I'm definately doing these little french toast breakfast this weekend!! :) with a pinch of nutmeg too!! but I will have to use.. ms buttersworth syrup.. *GASP* shock .. i know... but i don't have an real maple syrup in my pantry right now!! UGH! :)
