Vanilla Cupcakes

You can't go far wrong with a good vanilla cupcake!  Here is a simple recipe I use to whip up a couple dozen of these little gems.  Make sure to use good quality vanilla for the best flavour. 

Vanilla Cupcakes

1-3/4 cup flour

1 Tbsp baking powder

1/2 tsp salt

1/2 cup butter

1 cup sugar

2 eggs

1 tsp vanilla

3/4 cup milk

350 degrees F (180 C) 20-25 minutes

 

Vanilla Butter Frosting

1/4 cup butter

pinch of salt

2-1/2 cups icing sugar

4 Tbsp milk

1/2 tsp vanilla
