I never have a problem making room for dessert and never quite understand when someone says something is too sweet for them. Butter tarts were a favourite baked treat of mine as a kid but nowadays it is not very often that I make them - because I will eat too many! Here is a simple recipe for butter tart squares - no fussing with pastry or tart shells and easy to serve in small portions. The recipe yields about 25 squares so a little goes a long way with these sweet, raisin-y treats. They freeze well too!
Raisin Tart Squares
1-1/3 cup flour
2 Tbsp sugar
1/2 cup butter
2 eggs
1-1/4 cups packed brown sugar
1/4 cup melted butter
1 cup raisins
1 Tbsp vinegar
1 tsp vanilla
1 tsp flour
Crust - 9" square greased pan, 350 degrees F (180 C) 10-12 minutes
Squares with filling: Bake another 25-30 minutes
