I love to make this show-stopper coffee cake and my family loves to eat it! It's a perfect combination of lemon and blueberries and I like to bake it in a bundt pan so that each piece shows off the pretty centre. I dust it with powdered sugar right before serving - perfect with a cup of coffee and a friend.
Blueberry Lemon Coffee Cake
2/3 cup butter
1-1/2 cups sugar
2 eggs
1 Tbsp vanilla
grated rind of 2 lemons
3 cups flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk
1/2 cup plain yogurt
1-1/2 cups fresh or frozen blueberries
350 F, greased bundt pan, 60 minutes
